This chorizo casserole is a comforting, one-pan wonder that’s perfect for breakfast, brunch, or dinner. Get ready for a fiesta of flavors in every bite with this Omnia favorite.

Ingredients

  • 10 oz 10 raw/fresh chorizo

  • 2 2 red bell peppers

  • 1 lb 1 potatoes

  • 1 1 onion

  • 2 cloves 2 garlic

  • 3/4 cup 3/4 cream

  • 3/4 cup 3/4 milk

  • 3-1/2 oz 3-1/2 grated cheese

  • 2 tsp 2 dried oregano

  • 1/2 tsp 1/2 salt

  • 1/2 tsp 1/2 black pepper

  • butter or oil to grease the Omnia Pan

Directions

  • Remove the skin from the fresh chorizo and slice it. Seed and julienne the bell peppers. Cut the potatoes into thin slices. Julienne the onion and mince the garlic.
  • Grease the Omnia Pan. Mix the potatoes, onions, garlic, and bell peppers and spread around the pan. Arrange the sliced chorizo on top of the vegetables.
  • Mix the cream with milk, oregano, salt and pepper. Pour over the veggies and chorizo in the Omnia Pan. Sprinkle the grated cheese on top. Cook at medium-high heat for about 30 minutes. The chorizo casserole is done when the potatoes are soft. If the potatoes are not soft after 30 minutes, lower the heat so you can continue cooking until the potatoes are done without burning the dish.
  • Serve the chorizo casserole with a salad and fresh bread.
