The cake from this recipe has a tendency to collapse, especially if you’re not using a bundt cake pan. But as RVers, we don’t really care if the cake looks lopsided.

We just care that it tastes great… and this cake does!

However, if you want a pretty cake, then this recipe probably isn’t for you. It might turn out perfectly… or it might collapse. That shows how wonderfully moist and fluffy it can be, but you’ll have to decide if you’re willing to risk eating a sad-looking (yet delicious) cake.

Cake Mix and Pudding Combinations

The simplest way to make this recipe is to use the same flavor cake mix and pudding mix. For instance, chocolate cake mix with chocolate pudding. (You can even add chocolate chips to make a triple chocolate cake!)

However, you can have some fun with complementary flavors, too! You can try some of the following combos or come up with your own:

  • Red velvet cake mix & chocolate pudding mix
  • Strawberry cake mix & cheesecake pudding mix
  • Orange cake mix & vanilla pudding mix
  • Lemon cake mix & vanilla pudding mix

Just keep in mind that the colors will mix! So if, for instance, you mix strawberry cake mix and chocolate pudding mix, it’ll probably turn out a pinkish brown.

If you don’t care about appearance, only flavor, then mix whatever flavors together 🙂

This doctored cake mix recipe makes box cake taste homemade! The pudding mix and added ingredients result in rich, moist cake that’ll taste as good as from scratch. We know it seems too good to be true, but just wait until you taste it!

Ingredients

  • 1 box 1 cake mix (15.25 or 16.25 oz)

  • 1 box 1 instant pudding mix (3.4 or 3.9 oz)*

  • 1 cup 1 sour cream

  • 1 cup 1 vegetable oil

  • 1/2 cup 1/2 warm water

  • 4 4 eggs

Directions

  • Preheat oven to 350 degrees F. Generously grease a 9-in. bundt cake pan or a 13×9 baking dish.**
  • Mix together all ingredients until well blended. (Do not add ingredients from the cake or pudding boxes; only use the powdered mixes.)
  • Pour batter into your greased pan.
  • Bake until top is springy to the touch, and a toothpick inserted into the center of the cake comes out clean (bundt pan: appx. 50 min; 13×9: appx. 40 min)
  • Let the cake cool before inverting on a plate or frosting (if desired).

  • *match pudding flavor to cake mix flavor, or choose a complementary flavor. Make sure you buy INSTANT pudding mix and do not buy cake mix that says “There’s pudding in the mix” on the box.
  • **If you’re limited on space in your RV and RV oven, use a 9-inch round cake pan. This recipe will make two 9-inch cakes.
