Many campers rely on the just-add-water pancake mix you buy at the grocery store to round-off their camping menu. But as convenient as that mix is, the pancakes are just “good enough.”

Why settle for good enough when you can quickly make your own pancake dry mix at home to take on your next camping trip? Toss a few wet ingredients into your RV fridge, and you’ll be all set to have delicious pancakes.

This sweet cream pancakes recipe will remind you of the famous pancakes at Black Bear Diner. You can top them with whatever you’d like, from fresh fruit salad to Nutella to good ol’ butter and syrup.

These sweet cream pancakes are thicker and richer than standard pancakes. You can mix the dry ingredients in advance and add the wet ingredients at camp.

Ingredients

  • 3 cups 3 all-purpose flour (preferably unbleached)

  • 1/2 cup 1/2 sugar

  • 3 tsp 3 baking powder

  • 1 tsp 1 baking soda

  • 1/2 tsp 1/2 salt

  • 2 2 eggs

  • 2 cups 2 heavy cream

  • 1 cup 1 milk

  • 1 Tbsp 1 vanilla extract

Directions

  • In a medium bowl, combine the dry ingredients. Sift them, if possible, or break up any chunks with a fork or whisk. Mix thoroughly. Set aside or package in an airtight container for future use.
  • In a separate large mixing bowl, add and whisk the wet ingredients until they are well combined.
  • Slowly add the dry mix to the wet ingredients, mixing only until it’s combined. Be careful not to overmix.
  • Preheat skillet over medium heat. Spray with nonstick cooking spray.
  • Add 1/4 cup batter to the pan. Cook for 2-3 minutes or until bubbles appear in the middle and along the edge of the batter. Only flip when the bubbles appear and stay near the edge of the batter. (If the bubbles appear, but then disappear, it’s not ready to be flipped.)
  • After you flip the pancake, cook for an additional 2-3 minutes or until its golden brown.
  • Top with your favorite pancake toppings and enjoy!

Notes

  • If you want to make the dry mix in bulk before your camping trip, I recommend separating each batch into individual plastic baggies or airtight containers. Otherwise, the salt, baking soda, and baking powder might not get evenly distributed in the dry mix.
