The Sizzling Shrimp & Asparagus Recipe

The following recipe uses the very versatile Land O Lakes Garlic & Herb Butter Spread. It’s great on meat, veggies, potatoes, and garlic bread.

To make your own garlic butter, mix 6 Tbsp of butter with 4 tsp of minced garlic. For the herb flavor, sprinkle 2 Tbsp of chopped fresh parsley over the cooked shrimp and asparagus.

This recipe is great to eat on its own or serve with steak, especially if you use our easy steak seasoning recipe.

Easily cook these shrimp & asparagus foil packets on the grill or over the campfire. Enjoy lots of fresh flavor with minimal effort!

Ingredients

  • 1-1/2 lbs 1-1/2 large shrimp (21/25), peeled & deveined

  • 1 lb 1 medium thickness asparagus, woody ends trimmed

  • 6 Tbsp 6 Land O Lakes Garlic & Herb Butter Spread

  • salt & pepper to taste

  • 2 Lg 2 lemons, quartered into wedges

Directions

  • Cut 4 sheets of 14 by 12-inch heavy-duty aluminum foil. Lay each flat on a solid surface.
  • Divide shrimp and asparagus evenly between foil sheets, grouping them next to each other.
  • Add appx. 1.5 Tbsp of butter to each packet, dividing it over the shrimp and asparagus. Season with salt & pepper.
  • Pull the long edges of the foil sheets together and crimp. Then roll and crimp the sides. Do not wrap too tight, as you want the heat to circulate inside.
  • To Grill: Preheat grill to medium-high heat (400-425 degrees F). Place each packet sealed-side upward, and grill for 9-10 minutes or until shrimp has cooked through.

    To Cook Over Campfire: Pre-light the campfire and let it burn down to a low fire. Place grill grate over the campfire (the packets should be above the flames). Place each packet sealed-side up on the grate. Cook time depends on the fire, so you must check the shrimp after several minutes and remove it once it’s cooked through.
  • Carefully unwrap and serve each packet with two wedges of lemon for individuals to squeeze their desired amount of lemon juice on top.
