You’ll love this recipe for camping because cooking doesn’t take time away from your vacation! You can cook it in advance to stock your RV freezer or toss it in the crockpot on the go.

It’s usually the first dinner in our camping meal plan. We like to brown the meat and prep the veggies at home before we leave. Then, we put it all in the crockpot and plug it in in the RV. To keep the crockpot stable, we place it in our RV sink, padded by towels.

Then, when we arrive at camp, we don’t have to worry about making dinner in addition to setting up camp. It’s ready to eat!

This delicious, hearty stew is a favorite among RVers! Cook and freeze it in advance or slow cook it on the go! We recommend putting your crockpot in your RV sink, padded by dish towels to keep it from rattling while driving down the road. Or, put it on at lunch time at the campsite and it will be ready for dinner when you get back from an afternoon of adventures!

Ingredients

  • 1-1/2 lbs 1-1/2 beef stew meat (like chuck steak), cut into 1-inch pieces

  • 1 cube 1 beef bouillon

  • 2 cups 2 beef broth

  • 1 1 bay leaf

  • 1/4 tsp 1/4 ground black pepper

  • 2 2 potatoes, peeled and cubed

  • 2 ears 2 corn on the cob, cut in thirds

  • 1 large 1 onion, chopped

  • 4 cups 4 shredded cabbage

  • 1 cup 1 green beans, cut in half

  • 1 (8 oz) 1 can tomato sauce

  • salt to taste

Directions

  • Brown stew meat on all sides in a large saucepan or Dutch oven over medium heat, 10 to 15 minutes. Drain excess grease.
  • In a bowl, stir beef bouillon into beef broth until dissolved.
  • Put stew meat in the crockpot and pour the bouillon broth over it. Add all other ingredients to the crockpot in the order listed. (Cabbage will add liquid to the broth as it cooks down)
  • Cook on low for 5 hours or until potatoes and meat are tender.
