Best Leftover Mac and Cheese Casserole

This easy recipe combines two of our most popular camping food recipes to make a delicious leftover mac and cheese casserole.

As you may have noticed, most “leftover” mac & cheese recipes only use uncooked pasta. Hello?! How is that leftovers?!

This leftover macaroni and cheese recipe actually uses leftover cooked mac & cheese by combining two of our most popular camping recipes. Our camping mac & cheese made in an Omnia oven and our leftover hamburger casserole.

This recipe takes any leftover camping mac & cheese you have and adds it to our leftover hamburger casserole recipe. It’s a flexible recipe that you easily adjust based on the amount of leftover pasta you have. 

Of course, this recipe works with any leftover mac n’ cheese, but it’s best with our homemade macaroni and cheese made in an Omnia oven.

Wait, What’s an Omnia Oven?

An Omnia oven is a Swedish stovetop oven that allows you to bake, cook, and grill delicious meals wherever (or however) you camp. It’s specially designed for gas stovetops, electric hot plates, and camping stoves. 

In many ways, it’s like a lightweight Dutch oven. In fact, it’s only about 1/4 the weight of a Dutch oven of the same size.

​Use Your Omnia Oven to Make This Casserole

Our recipe card below explains how to make the leftover mac & cheese casserole in an RV oven, but you can also bake it in an Omnia oven. Simply substitute the casserole dish for a greased Omnia oven and cook over medium-high heat until the tater tots are golden brown.

Flavor Variations

The best thing about this easy macaroni casserole recipe is its flexibility. You can tweak it to your taste buds or whatever ingredients you have on hand. 

That’s why it’ll likely become your favorite comfort food whenever you camp. You really can’t go wrong with cheesy flavor and tater tots, right?!

  • The recipe calls for cheddar cheese, but you can play with the combination of cheeses to complement your leftover mac and cheese. Feel free to experiment with different types of cheese, like, Monterey jack, pepper jack cheese or parmesan cheese.
  • For extra flavor and a spicier kick, add a sprinkle of chili powder or black pepper to the cream of mushroom soup or ground beef as you brown it.
  • It goes great with a variation of sauces, including BBQ sauce, sour cream, and ranch dressing.

This recipe combines two of our most popular camping recipes: our leftover hamburger casserole and Omnia mac and cheese. It puts any leftover mac & cheese you have to good use!

**Simply substitute your leftover mac and cheese for equivalent portions of the tater tots and cheddar cheese.**

This casserole is very forgiving; you can tweak the amounts based on what you have available. Just be sure to try to balance the wet and cheesy ingredients with the dry.

Ingredients

  • 1 lb 1 Leftover hamburger patties or browned ground beef

  • 10.5 oz can 10.5 oz cream of mushroom soup

  • 16 oz bag 16 oz Tater tots MINUS your leftover mac & cheese

  • 2 cups 2 Shredded cheddar cheese MINUS proportionate to your leftover mac & cheese

  • salt & pepper to taste

Directions

  • Preheat oven to 350 degrees F. Grease the bottom and sides of a 9×13-in baking dish.
  • Crumble or cut the leftover hamburger patties into small pieces in a bowl, or brown ground beef. Mix in cream of mushroom soup. Season to taste with salt & black pepper.
  • Spread hamburger mix in bottom of baking dish and cover with a layer of tater tots and leftover mac and cheese. Liberally sprinkle cheese across the top.
  • Bake for 30-40 minutes, or until tater tots are golden brown.

  • You can also bake this casserole in your Omnia oven on the stovetop or grill! Cook over medium-high heat until the tater tots are golden brown.

Still Have Leftovers?

Having leftovers of leftover casserole may not sound appetizing, but it actually reheats quite well. For best results, mix in some extra cheese before you reheat. Or you can add a sauce, like BBQ sauce or ranch dressing.

If reheating in a microwave, it helps to sprinkle a little water on top or place a glass of water in the microwave as it reheats. That’ll help prevent the microwave from drying it up.

So, if you have any leftovers, store them in an airtight container in the fridge and enjoy them the next day.
