Toast a delicious sandwich over your campfire with a pie iron! This versatile campfire cooking tool makes sandwiches, breakfast foods, desserts, and more. And yes, that includes pie!

We will add many campfire pie iron recipes to our site but decided to start with the classic grilled cheese sandwich. But just because it’s a classic doesn’t mean it has to be basic.

With a couple of extra ingredients, you can make a cafe-worthy grilled cheese and tomato sandwich wherever you camp. It really just comes down to the type of cheese and a sprinkle of basil!

Grilled Cheese with Tomato Sandwich Recipe

This pie iron recipe is so easy, we don’t need to provide any extra tips or info. All you need is a pie iron and this recipe. (Although, a 9-in-1 camping cutting board comes in handy, too.)

Ingredients

  • 4 slices 4 sandwich bread (preferably sliced sourdough)

  • 2 Tbsp 2 mayonnaise

  • 1 1 tomato, sliced

  • 2 slices 2 cheddar cheese

  • 2 ounces 2 Gruyere cheese, grated (or mozzarella)

  • 1/4 tsp 1/4 salt

  • pinch of dried basil

Directions

  • Slice tomato 1/4″ thick and place slices on paper towels. Sprinkle with 1/4 teaspoon of salt and let drain for 10 minutes.
  • Generously spray pie iron with cooking spray.
  • Spread a 1/2 tablespoon of mayonnaise on one side of each slice of bread.
  • Place one slice of bread in pie iron, mayonnaise side down.
  • Add 1 slice of cheddar cheese, desired amount of tomato slices, a pinch of basil, and 1 oz of gruyere. Top with 1 slice of bread, mayonnaise side up.
  • Close pie iron over the sandwich. Trim any excess bread.
  • Cook your sandwich for 4 to 7 minutes, turning halfway, until the bread is golden brown and the cheese is melted. For best results, keep the pie iron in a hot area of coals, but not the hottest area. Otherwise, the bread might burn before the cheese melts.
  • Carefully remove sandwich from pie iron and generously spray pie iron again with cooking spray. Repeat steps 4-7 for the second sandwich.
  • Cook on Grill Alternative: Preheat the grill on medium heat (300 to 400 degrees). Place pie iron directly on the grill and cook for approximately 3 to 4 minutes per side, or until the bread is golden brown and the cheese is melted.

  • Don’t forget to generously spray your pie iron for each sandwich!
  • You can substitute butter for the mayo, but mayo toasts better without burning as easily.
